La Cereza – Banana
About the Coffee and the Farm
La Cereza – Banana is a specialty infused coffee from the La Cereza Farm and Research Center in San Agustín, Huila — a UNESCO World Heritage town considered by many to be the mecca of specialty coffee production in Colombia. It's a place where deep archaeological history and exceptional terroir meet, and where some of the country's most progressive processing work is happening today.
Sitting at 1,800 meters, La Cereza is led by Andrés Felipe Ospina — an MSc, biologist, and CQI Q Processing instructor whose team runs hundreds of processing protocols each year, with a particular focus on native microorganisms and their role in flavour development. The farm is also one of Colombia's most decorated processing facilities in recent COE history, with multiple finalist lots in 2019 and 2020. This lot — a blend of Colombia, Caturra, and Castillo varieties — went through an innovative infused process that delivers a clear, modern fruit-forward character without losing the integrity of specialty coffee.
In the cup, expect a vibrant fruit-forward profile: soft banana up front, tropical fruit through the middle, and a gentle vanilla sweetness that frames quieter notes of black currant and honeydew. The body is juicy, the sweetness is clean, and the finish is bright and balanced — playful, but undeniably specialty.
Result: A clean, expressive, fruit-forward cup with soft banana sweetness and a balanced finish.
